ondeh ondeh!

since my dad likes ondeh ondeh. Figured it would be a good time to make some for father's Day. Here's the ingredients and how to do it.... to make 35 balls of ondeh ondeh.


Ingredients

75g of sweet potato

125g of glutinous rice flour

25g of rice flour

pinch of salt

1 tbsp of veg oil

125ml of warm water

1/4 tbsp of green pandan coloring

150g of gula melaka

125g of grated white coconut

First up, peel and wash the sweet potatoes. I suggest to cut them into cubes rather than boiling them whole as smaller pieces means faster cooking. Boil them until they are soft.
Since the sweet potatoes will take some time to boil. this is a good time to finely chop the gula melaka into fine pieces. the finer the better since you can fill more into the ondeh dough without worrying that its in a weird odd shape and might leak while you boil the dough balls later on.

Once the sweet potatoes are soft it means they are ready. Place them in a large mixing bowl and add both the rice flours, salt and oil. Add in warm water a little at a time and knead well till a ball of dough is formed. Add the green colouring and mix well.

Yes you might take a little more effort than usual to get the dough into this texture. Its good exercise really. Not easy at all!

Roll a little dough in your palm to form a ball with diameter about the size of a 50cent coin. If you are into the measureing mood, then its 10g to make a small ball. Make a well in the middle of the ball and fill it with gula melaka. Pinch it to seal it, then roll into a ball again. Repeat with the rest of the dough.

In a pot of boiling water, cook the ondeh ondeh.....


until they float.. Remove and drain the excess water.


Gently coat the ondeh ondeh with the grated coconut leave it to cool and little and then serve!


Glad to say that this dish was a success for a time making it. =)
